Scrambled Eggs on Toast with Chives

  1. Toast bread (3) in a toaster or under the grill.
  2. Crack eggs (5) into a bowl. Add milk (45 ml), salt, and black pepper. Whisk briefly.
  3. Melt butter (30 g) in a pan over low-medium heat. Pour in the egg mixture. Stir slowly with a spatula, pulling from the edges inward, for ⏲ 3–4 minutes. Remove from heat just before fully set — residual heat finishes them.
  4. Pile onto toast and scatter chives (10 g) over the top.
