Ingredients
- 225 g cabbage (1/4 medium green cabbage, cored and thinly sliced lengthwise; Weißkohl)
- salt (Salz)
- 1 red onion (small, halved and sliced thinly; rote Zwiebel)
- water (Wasser)
- 450 g roasted red peppers (1 jar, drained and pat dry; geröstete Paprika)
- 15 g tomato paste (Tomatenmark)
- 5 g calabrian chile paste (optional, plus more to taste; kalabrische Chilipaste)
- 4 g sugar (Zucker)
- 2 garlic (cloves, minced; Knoblauch)
- 15 g parsley (chopped, leaves and tender stems; Petersilie)
- 15 ml olive oil (Olivenöl)
- 10 ml red wine vinegar (Rotweinessig)
- 10 g oregano (dried)
- black pepper (schwarzer Pfeffer)
- 2 hero rolls (20-25cm, plain, seeded or whole wheat; Baguettebrötchen)
- 225 g turkey (thinly sliced deli; Putenbrust)
- 115 g ham (thinly sliced deli; Schinken)
- 60 g salami (sliced deli)
- 60 g soppressata (sliced hot)
- 115 g provolone (thinly sliced)
- 1 dill pickles (sliced lengthwise into planks, or dill pickle chips; Gewürzgurken)
Steps
- In a colander set in the sink, combine cabbage (225 g) with salt. Toss to coat, massage gently, and leave to drain. In a small bowl, soak red onion (1) in cold water. Let both sit for ⏲ 30 minutes while you prepare everything else.
- In a food processor, combine roasted red peppers (450 g), tomato paste (15 g), calabrian chile paste (5 g), sugar (4 g), and garlic (2) until finely chopped and spreadable but not puréed. Taste and adjust seasoning
- Rinse, drain, and pat the cabbage dry with a clean kitchen towel, then place in a large bowl. Drain the onion and add it to the cabbage along with parsley (15 g), olive oil (15 ml), red wine vinegar (10 ml), oregano (10 g), and a few grinds of black pepper. Toss together, then taste and adjust seasoning.
- Slice hero rolls (2) in half lengthwise and spread the red pepper spread evenly across all four halves. On the bottom halves, shingle turkey (225 g), ham (115 g), salami (60 g), and soppressata (60 g), then provolone (115 g), then top with dill pickles (1). Pack the slaw onto the top halves and swiftly close the sandwiches, pressing down to secure. Use a serrated bread knife to cut each hero into 4 pieces.
