Southern Green Beans with Bacon
Version v1 current · History (1)
Serves 3
Ingredients
- 3 bacon (slices; or a handful of real bacon bits; Frühstücksspeck)
- 15 g bacon fat (if you keep a jar; skip if the bacon gave plenty; Speckfett)
- 800 g canned green beans (2 cans; grüne Bohnen aus der Dose)
- 2 g onion powder (optional; Zwiebelpulver)
- 2 g garlic powder (optional; Knoblauchpulver)
- black pepper (schwarzer Pfeffer)
- salt (Salz)
Steps
- Chop bacon (3) and cook in a pot over medium until the fat renders and the pieces start to brown, about ⏲ 5 minutes. Add bacon fat (15 g).
- Add canned green beans (800 g) with about half of their liquid. Less liquid is better. You want them to braise, not swim.
- Season with onion powder (2 g), garlic powder (2 g), and black pepper. Hold the salt until the end, since canned beans and bacon are both salty.
- Bring to a boil, then drop to a steady simmer, uncovered, for ⏲ 20–30 minutes, until the liquid has mostly cooked down and the beans are soft and glossy with bacon fat. Taste and add salt only if needed.
