Sheet-pan Salmon with Potatoes and Asparagus

  1. Preheat the oven to 200°C.
  2. Halve small waxy potatoes (600 g) and toss with olive oil (15 ml) and salt on a sheet pan. Roast ⏲ 20 minutes.
  3. Snap the woody ends off green asparagus (500 g) — they break naturally at the right spot.
  4. Add the asparagus and salmon (375 g) to the pan. Drizzle everything with olive oil (15 ml), salt, black pepper, and a squeeze of lemon (1).
  5. Roast ⏲ 12–15 minutes more, until the salmon flakes easily and the asparagus is tender-crisp.
  6. Plate Cozy's salmon, potatoes, and asparagus plain with a pat of butter. Lemon wedges on the side for the adults.
