Sheet-pan Salmon with Potatoes and Asparagus

Ingredients
- 600 g small waxy potatoes (Drillinge)
- 30 ml olive oil
- salt
- 500 g green asparagus
- 375 g salmon (skin-on fillet, placed skin down)
- black pepper
- 1 lemon
- butter
Steps
- Preheat the oven to 200°C.
- Halve small waxy potatoes (600 g) and toss with olive oil (15 ml) and salt on a sheet pan. Roast ⏲ 20 minutes.
- Snap the woody ends off green asparagus (500 g) — they break naturally at the right spot.
- Add the asparagus and salmon (375 g) to the pan. Drizzle everything with olive oil (15 ml), salt, black pepper, and a squeeze of lemon (1).
- Roast ⏲ 12–15 minutes more, until the salmon flakes easily and the asparagus is tender-crisp.
- Plate Cozy's salmon, potatoes, and asparagus plain with a pat of butter. Lemon wedges on the side for the adults.
