Creamy Mushroom Pasta with White Beans

Ingredients
- 250 g penne or farfalle
- 18 ml olive oil
- 18 g butter
- 500 g mushrooms (cremini or button, sliced)
- 1 onion (medium, diced)
- 4 garlic cloves (minced)
- 6 g dried thyme
- 180 ml vegetable broth
- 290 g white beans (cannellini, drained and rinsed — about one full 400g tin)
- 125 ml Kochsahne (or single cream)
- 35 g Parmesan (grated)
- salt
- black pepper
- 100 g baby spinach
- 1 Knorr Salatdressing (any flavor)
- 100 g Feldsalat (rinsed and dried)
Steps
- Bring a pot of well-salted water to a boil. Cook penne or farfalle (250 g) for ⏲ 1 minutes less than the packet says. Reserve a ladleful of pasta water before draining.
- Heat olive oil (18 ml) and butter (18 g) together in a large pan over medium-high heat. Add mushrooms (500 g) in a single layer — do not crowd. Cook undisturbed ⏲ 4 minutes until golden on one side, then stir and cook ⏲ 2 minutes more. They need to brown, not steam. Work in two batches if your pan is not large enough.
- Reduce heat to medium. Add onion (1) and cook ⏲ 3 minutes until softened. Add garlic cloves (4) and dried thyme (6 g), cook ⏲ 1 minutes.
- Pour in vegetable broth (180 ml), scraping up any browned bits. Stir in white beans (290 g). Simmer ⏲ 3 minutes until beans are warmed through. A few will break down into the sauce — that is fine and helps thicken it.
- Add Kochsahne (125 ml), stir to combine, and simmer gently ⏲ 2 minutes until slightly thickened. Stir in Parmesan (35 g). Season with salt and black pepper.
- Add drained pasta to the sauce and toss to coat. Add a splash of reserved pasta water if too thick. Stir in baby spinach (100 g) and let it wilt for ⏲ 30 seconds.
- While the pasta finishes, make the salad dressing. Empty Knorr Salatdressing (1) into a small jar or bowl. Add water, oil and vinegar as directed on the packet. Shake or whisk until combined.
- Toss Feldsalat (100 g) with the dressing just before serving.
- Serve pasta with extra Parmesan and chopped parsley for adults. Feldsalat on the side.
