Caramelized Garlic Fish
- Rinse basmati rice 200 g and put it in a small pot with water 300 ml and a pinch of salt. Bring to a boil, cover, turn the heat to lowest, and cook ⏲ 12 minutes. Take off the heat and leave covered ⏲ 5 minutes. Start the fish while the rice cooks.
- Put sugar 25 g in a large saucepan and break up any clumps. Dampen it with water 5 ml and set over medium heat. Without stirring, let the sugar melt and turn dark gold, ⏲ 3–5 minutes, swirling the pan if it colours unevenly.
- Add neutral oil 15 ml and garlic cloves 3. Stir ⏲ 1–2 minutes, until the garlic is coated and just soft. Add fish sauce 30 ml and water 30 ml, and stir until any hard bits of sugar dissolve and the sauce bubbles.
- Lay fish fillets 450 g in the pan in a single layer. Turn the heat to medium-low and partly cover. Cook ⏲ 4–5 minutes, turning the pieces once, until opaque on both sides. Uncover and simmer ⏲ 1–2 minutes more, until just cooked through.
- Take off the heat. Grind plenty of black pepper over the top and scatter with cilantro 10 g. Gently break the fish into smaller pieces so they soak up the sauce, and serve right away over the rice.
